peach cookies



i admit, these cookies are a little bit of a labor of love. but their charm and dainty cuteness make it all worth it. wouldn't these be adorable at a baby or wedding shower!

maria price's peach cookies
makes about 4 dozen
3/4 c. sweet butter
1/2 c. milk 
1 c. sugar
2 eggs
1 teaspoon baking powder
3 3/4 c. all purpose flour  
1 teaspoon vanilla 
2/3 c. apricotjam  
2 tablespoons chopped mint leaves  
1/4 c. chocolate pieces, melted and cooled  
1/3 c. ground pecans  
2 teaspoons rum or sherry  
1/4 c. water  
1/3 c. red sugar  
2/3 c. yellow orange sugar  
whole candied mint leaves

preheat the oven to 325. put the butter, milk, sugar, eggs, baking powder and 2 cups of the flour in the bowl of an electric mixer. blend 1 minute on low speed scraping the bowl constantly, then beat 1 minute on meduim while continuing to scrape the bowl. stir in the remaining flour and vanilla. the dough will be smooth and soft.
 shape the dough into smooth 3/4 inch balls. (each will be half a peach). place the cookies 1-inch apart on an ungreased baking sheet and bake on the center shelf of the oven for 15-20 minutes or until cookies are brown on the bottom. cool on a rack. place the tip of a small knife in the center of the flat side of each cookie, and carefully rotate to make a hollow. reserve the crumbs.
 warm the jam and mint leaves over low heat. mix the minted jam, chocolate, reserved crumbs, nuts, and rum. fill the hollow of the cookie with mixture. push the flat sides of two cookies together to make a peach.
brush each peach with water. dip a small part of one side in the red sugar for the blush of the peach. drop in the yellow sugar and coat. put a candied mint leaf in the top and let dry.
